toasted cheese sandwich with egg

Where is the recipe from? 'Toast It'. No author on this book, I picked it up last year for just a few pounds from a discount book shop in town.
Ingredients & any changes made? The recipe calls for decent quality slices of bread, lightly toasted each side. Decent ham, a large tomato thinly sliced, 1 tbsp of snipped fresh chives, handful of flat leaf parsley, chopped (no stalks), 2 slices of cheese - monterey, wensleydale,cheshire or cheddar, pepper, olive oil, 1 egg (poached).
On one side of the toasted bread you pile on the ham, tomato, parsley and chives, season then top with cheese, drizzle with a little bit of olive oil and pop under the grill. Then sandwich with the remaining slice and toast a bit longer. Finish with a poached egg on top.
I forgot about the parsley and chives, so used some of the spinach left over from yesterday's supper.
I also changed the cheese. I bought some rather fantastic Cheddar with Branston Pickle, and thought I'd use that.It looks a bit dodgy, but as long as you like Branston Pickle, it is fantastic.
Verdict? I LOVE this. I have made it a lot, it's a real favourite. It's one of my 'luxury' breakfast treats. Though it would do brilliantly as a quick and easy lunch.
Basically it's just a tarted up toasted cheese sarnie with a poached egg perched on top, but by using decent quality bread and ham, and adding all the little extras, it takes it up a level to something a little more special.

  1. oh yummy...my boys would *love* something like this! I'll have to give it a go sometime. You don't have to bother about buttering the bread to toast it?? If not, even better!! We do grilled cheese a lot but I dislike how much fat there is in them. If I did a toasted cheese then and could skip the butter on the outside then that would be wonderful. (and the boys would down them just as fast!!) Love the poached egg on top!
